Turkey Burritos

This is one of my favorite dishes to make; it is fairly easy and very satisfying.  I am posting it made with low fat ground turkey breast, but I have made it with regular ground turkey, as well as with just plain chicken breast that I have sauteed then chopped into small pieces.  It would work with any meat and would probably be even better with some more fat in the meat!  If you do use anything other than low fat turkey breast, you will want to drain the fat from the pan after cooking the meat and before adding your spices.

6 -8 cloves of garlic, chopped fine then sauteed in just enough oil to cover the bottom of a deep frying pan.  We usually use very light olive oil for just about all of our cooking.

When the garlic is slightly browned add your choice of meat

1 to 1-1/2 lb package of ground turkey breast

Once the turkey starts to brown, use a spatula to break it up into small pieces (you might have to work at it for a while to get a nice consistency)

Add the following spices to the turkey and remember I don’t measure so add per your taste

1/2 tsp cayenne pepper

1/2 tsp chili powder

1/2 Tbs ground cumin

Salt and pepper

After the meat appears to be browned all the way through add the following vegetables

4 roma tomatoes chopped into 1/4″ pieces

1 large jalapeno pepper, seeds and all, chopped fine

3 tomatillos chopped into 1/4″ pieces

1/2 lb frozen white corn

1 – 15 oz can black beans, drained and rinsed

Stir these into you meat so they blend well

After these have cooked for about 5 – 10 minutes I like to add

2-3 Tbs of Cholula hot sauce

2 Tbs of lime juice

Stir the mixture well

While burrito filling is staying warm on the stove top, it is time to prepare the tortillas

1 large burrito size tortilla spread with about 1/4 cup of Tillamook Mexican cheese down the middle and then warmed up in a microwave oven for about 30 seconds

Spread your burrito filling on top of the cheese and top with some fresh chopped cilantro and extra Cholula hot sauce

Time to roll the tortilla up; fold two opposite sides of the tortilla in about of the 1/3 of the way over the cheese and meat then roll up from one of the other sides into your perfect burrito.
